Herb Roasted Whole Chicken with Chickpeas

Ingredients

  • 1 whole chicken (with insides removed)

  • 1 15.5 oz can chickpeas

  • 1 stick butter

  • fresh rosemary, thyme and sage

  • 1 tsp garlic

  • 2 TBS olive oil

  • salt and pepper to taste

Directions

  1. Preheat oven to 425 degrees Fahrenheit

  2. Chop fresh herbs and set aside

  3. Mix chickpeas with salt, pepper, olive oil and a pinch of herbs

  4. Mix butter with fresh herbs and salt

  5. Stuff chicken with chickpeas and place in a 9x13 inch baking dish

  6. In between skin and meat add butter herb mix throughout entire chicken

  7. Cook for 1 hour or until chicken is fully cooked

  8. Remove chickpeas and cut chicken

  9. Enjoy!!!!
