Sweets and Beets

Ingredients

  • 4 sweet potatoes cubed

  • 1 cup cubed cooked beets

  • 2 TBS cream

  • fresh basil

  • salt and pepper to taste

  • 1 TBS olive oil

  • Cooking spray


Directions

  1. Preheat oven to 425 degrees Fahrenheit

  2. Place aluminum foil on a baking sheet and spray with cooking spray

  3. Place diced sweet potatoes on tray, drizzle with olive oil and season with salt and pepper

  4. Place in oven and cook for 20 minutes

  5. Remove from oven and add beets and mix everything together on tray

  6. Return to oven for an additional 10-15 minutes

  7. Remove from oven and sprinkled with fresh chopped basil and drizzel with cream

  8. ENJOY!!!
