Grandma's Gluten Free Italian Pizzelles

Do you have a favorite Christmas cookie from your childhood? My Grandma's Italian Pizzelles are my favorite Christmas cookie! The smells of them cooking brings back the best memories. I used to love to make these beautiful cookies with her and enjoyed eating them even more. A memory I cherish so much. They are a tradition I'm happy to be able to share with my kids. Thankfully it was easy to turn them gluten-free. I am so thankful I can carry on the tradition of these family cookies and make them safe and gluten-free for me and my kids. I hope you enjoy.

Recipe

  • 3 beaten eggs

  • 1 1/2 sticks of softened butter

  • 1 cup sugar

  • 1 1/2 cups GF flour that contains xantham gum

  • 1 tsp baking powder

  • 2 tsps vanilla extract

  • 1 tsp anise

  • Powder sugar

Instructions

  1. Mix all ingredients together in order listened

  2. Chill overnight

  3. Put teaspoon of dough onto pizzelle iron (this takes some experimenting with placement on iron)

  4. Dust with powdered sugar

  5. ENJOY!
