All of my favorite holiday memories revolve around Christmas cookies. This recipe is a recipe handed down to us by my Great Grandmother with a gluten-free twist. I remember being a little girl and making these with my Grandma. I would love to coat them in sugar and I was so excited to put the little kiss in the center once they had finished cooking. They are so delicious and filled with amazing Christmas memories. These are definitely going to be Santa's favorite gluten-free cookie this year. I hope you enjoy.
Ingredients
1 cup shortening
4 TBS milk (dairy-free works just fine)
2 eggs
1 cup sugar + 1/2 cup to roll dough in
1 cup brown sugar
3 1/2 cups gluten-free flour (make sure mix contains xantham gum, otherwise add to the mix)
2 tsp baking soda
1 cup smooth peanut butter
1 tsp salt

Directions
Preheat oven to 375 degrees Fahrenheit and line cookie sheet with parchment paper
With a mixer cream together shortening and both sugars, then add eggs and milk
Add baking soda, salt and flour
Once ingredients are combine add peanut butter
Roll into 1 inch balls and roll in sugar
Place balls on baking sheet and bake for 6- 8 minutes
While hot press Hershey's Kiss into the center of cookie
Transfer to a wire rack to let cool
