Serves 3 dozen Prep Time 20 mins Chill Time 1 hr Cook Time 10 min Total Time 1 hr 30 mins
Ingredients
1/2 cup vegetable oil
4 oz unsweetened chocolate
2 cups sugar
4 eggs
2 teaspoons vanilla extract
2 cups gluten free flour
1/2 teaspoon baking powder
1/2 cup powdered sugar
Instructions
In a medium sauce pan melt unsweetened chocolate on medium low heat. Stir constantly until melted so chocolate does not burn. Once melted remove from heat.
Using a mixer combine oil, chocolate and sugar in a medium mixing bowl. Add one egg at a time, mixing well between each egg. Add vanilla.
Add flour, salt and baking powder to wet ingredients.
Chill in the refrigerator in a covered container for at least 1 hour or overnight.
Preheat oven to 350 degrees Fahrenheit. Line baking sheet with parchment paper and set aside.
Form 1 tablespoon of dough into a ball and roll in powdered sugar. Repeat until all dough is used.
Place dough 2 inches apart on lined baking sheet.
Bake for 10-12 minutes.
Remove from oven and let cool for 2 minutes, then move to a cooling rack.
ENJOY!
