Gluten Free Chocolate Crinkle Cookies

These Gluten Free Crinkle Cookies are the best around! A family recipe passed down by my husbands family, turned gluten free. So rich and chocolaty with an irresistible brownie textured center with a delicious cookie crunch on the outside! Such a classic Christmas cookie you will be so happy you made! Hope you ENJOY!!!!



Serves 3 dozen Prep Time 20 mins Chill Time 1 hr Cook Time 10 min Total Time 1 hr 30 mins


Ingredients

  • 1/2 cup vegetable oil

  • 4 oz unsweetened chocolate

  • 2 cups sugar

  • 4 eggs

  • 2 teaspoons vanilla extract

  • 2 cups gluten free flour

  • 1/2 teaspoon baking powder

  • 1/2 cup powdered sugar


Instructions


  1. In a medium sauce pan melt unsweetened chocolate on medium low heat. Stir constantly until melted so chocolate does not burn. Once melted remove from heat.

  2. Using a mixer combine oil, chocolate and sugar in a medium mixing bowl. Add one egg at a time, mixing well between each egg. Add vanilla.

  3. Add flour, salt and baking powder to wet ingredients.

  4. Chill in the refrigerator in a covered container for at least 1 hour or overnight.

  5. Preheat oven to 350 degrees Fahrenheit. Line baking sheet with parchment paper and set aside.

  6. Form 1 tablespoon of dough into a ball and roll in powdered sugar. Repeat until all dough is used.

  7. Place dough 2 inches apart on lined baking sheet.

  8. Bake for 10-12 minutes.

  9. Remove from oven and let cool for 2 minutes, then move to a cooling rack.
