Gluten Free Christmas Biscuit Cookies

These gluten free Christmas Biscuit Cookies are absolutely delicious. The texture of a shortbread cookie with similar flavors to a snickerdoodle. Filled with the perfect about of Christmas flavors with a fun twist of whisky, then covered in cinnamon sugar. Such a perfect cookies that will practically melt in your mouth! Serves 3 dozen Prep Time 10 mins Cook Time 9 mins Total Time 20 mins
Ingredients
Biscuits
1/2 lb softened butter
1 cup granulated sugar
1 egg beaten
1 teaspoon vanilla extract
3 cups gluten free flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 shot whisky (3 tablespoons)
1 tablespoon milk
Topping
1/2 cup granulated sugar
3 teaspoons cinnamon
Instructions
Preheat oven to 350 degrees F. Place parchment paper on baking sheet and set aside.
Using a mixer cream together butter, sugar and vanilla to a light fluff. Add egg and beat together until combine.
Add flour, baking powder and salt, mixing well. Add whiskey and milk, mixing until everything is combine.
Knead dough and divide into two sections.
Place dough on a piece of parchment paper and roll out to 1/2 inch thick.
Cut using your favorite cutter.
In a flat container combine sugar and cinnamon together. Dip cut out cookies in topping, then place on baking sheet.
Repeat steps 5-7 until all of the dough is cut out.
Bake for 8-10 minutes. Remove from oven and immediately move to a cooling rack.
