Gluten Free Caprese Bruschetta

This gluten-free Caprese Bruschetta is so flavorful and delicious. The simple combination of mozzarella, fresh tomatoes, onions, basil and garlic on a slice of gluten-free bread, drizzled with balsamic vinegar makes for the most amazing appetizer. I hope you enjoy!

Serves 6 Prep Time 20 minutes Total Time 20 minutes
Ingredients
3 large tomatoes diced
8 oz fresh mozzarella pearls
1/4 large purple onion diced
2 cloves fresh garlic diced
bunch of fresh basil leaves chopped
1 TBS olive oil
balsamic vinegar
salt and pepper to taste
1 gluten free baguette
Instructions
In a medium bowl mix together diced tomatoes, mozzarella, purple onion, garlic, basil, olive oil, salt and pepper
Slice gluten free bread and place on a baking sheet under broiler for 1-2 minutes, until bread is lightly toasted, remove and cool
Top gluten free bread with tomato topping, drizzle with balsamic and serve immediately
