Slow Cooker Beef and Cabbage Soup

Fall is my favorite time of year with all of the beautiful colors, the crisp, chilly air and the feeling of happiness it brings to me and my family. The perfect time of year to bring out the slow cooker and make a meal that fills my house with beautiful autumn smells. This beef and cabbage soup is exactly how fall feels to me; hints of clove, delicious broth, beautiful colors and hearty beef. The best part is it takes very little effort and tastes absolutely delicious.

Ingredients

  • 2 pounds beef roast

  • 1 purple cabbage

  • 32 oz gluten-free beef broth

  • 32 oz diced tomatoes

  • 1 small yellow onion

  • 4 bay leaves

  • 1/4 tsp ground cloves

  • 1 heaping tsp paprika

  • 1/4 cup apple cider vinegar

  • 1/2 cup sugar

  • 1 tsp salt

  • 1/2 tsp pepper

Directions

  1. Dice beef into cubes, chop purple cabbage and onion and place in slow cooker

  2. Add in remaining ingredients

  3. Turn slow cooker on high and cook for 6 hours

  4. ENJOY!!!!
