Gluten Free Baked Oatmeal

Are you looking for an easy gluten free breakfast? Look no further than this super delicious gluten free baked oatmeal. This is a staple in our house. Made with certified gluten free oats, blueberries, coconut and so much goodness.




Serves 6 Prep Time 10 minutes Total Time 45 minutes

Ingredients


  • 2 eggs

  • 1/2 cup of oil

  • 1 1/4 cups brown sugar

  • 1 1/4 cups milk

  • 3 3/4 cups gluten free rolled oats

  • 2 1/2 tsp baking powder

  • 2 tsps cinnamon

  • 1 tsp salt

  • 1 cup blueberries (fresh or frozen)

  • 1/2 cup shredded coconut


Directions


  1. Preheat oven to 350 degrees Fahrenheit and grease a 9x9 baking dish or a cast iron skillet

  2. In a large bowl mix together eggs, oil, milk and sugar. Once combined add oats, baking powder, cinnamon, blueberries 1/4 cup coconut and place in baking dish. Top with remaining coconut

  3. Bake for 30-35 minutes

  4. Serve warm and ENJOY!!!!


Tips

  • Any milk, dairy or dairy free works for this recipe

  • Suggested oil is vegetable or coconut

  • You can substitute different fruits in place of blueberries and coconut
