Gluten Free Baked Oatmeal

Are you looking for an easy gluten free breakfast? Look no further than this super delicious gluten free baked oatmeal. This is a staple in our house. Made with certified gluten free oats, blueberries, coconut and so much goodness.

Serves 6 Prep Time 10 minutes Total Time 45 minutes
Ingredients
2 eggs
1/2 cup of oil
1 1/4 cups brown sugar
1 1/4 cups milk
3 3/4 cups gluten free rolled oats
2 1/2 tsp baking powder
2 tsps cinnamon
1 tsp salt
1 cup blueberries (fresh or frozen)
1/2 cup shredded coconut
Directions
Preheat oven to 350 degrees Fahrenheit and grease a 9x9 baking dish or a cast iron skillet
In a large bowl mix together eggs, oil, milk and sugar. Once combined add oats, baking powder, cinnamon, blueberries 1/4 cup coconut and place in baking dish. Top with remaining coconut
Bake for 30-35 minutes
Serve warm and ENJOY!!!!
Tips
Any milk, dairy or dairy free works for this recipe
Suggested oil is vegetable or coconut
You can substitute different fruits in place of blueberries and coconut
